BEETROOT, YOGHURT AND LIME DIP
cooked beetroot 150g
garlic clove 1, crushed
spring onions 3, chopped
greek yogurt 3 tbsp
lime juiced to make 2 tsp
Cut the cooked beetroot into chunks and put in a small food processor with athe garlic, spring onions, greek yogurt and lime juice. Season well then whizz until smooth and scrape into a bowl. Serve with grilled halloumi.
