Baking without refined sugar

Stuffed Salted Almond Chocolate Dates
Organic Ingredients
For the filling:
- 40g almond butter
- 1 tbsp honey
- 2 tbsp desiccated coconut
- pinch salt
- 20g chopped nuts (macadamia is nice)
Chocolate:
- 20g raw cacao butter
- 3 tbsp raw cacao powder
- 1 tbsp honey
- pinch salt
12 dates (medjool are the softest and tastiest but you can use regular dried ones too)
Method
If you have brought medjool dates take the pip out and set aside.
Mix the almond butter, honey, desiccated coconut and salt in a bowl. Finely chopped the nuts and mix in.
Make the chocolate sauce by melting the raw cacao butter in a bain marie on a low heat.
Mix in the raw cacao powder, honey and salt.
Fill the dates with a small amount of almond butter mixture. Don’t over fill as you wont be able to cover them in chocolate.
Cover the dates with chocolate and put onto a lined baking tray and put into the fridge.
Take out and dip again and sprinkle with nuts.
Keep in the fridge and serve with a cup of tea or coffee as a tea time or after dinner treat.
